Find a desert or a tundra. Those are typically nice and flat, and have bright textures that make things easier to see at night. Just find one of them, go far enough out that you don't really have to worry about them spawning in other biomes, and set up shop there.
It's going to take awhile if you want to do it legitimately, but deserts and tundras are one of the quickest ways.
