How do i change the version of the server.

Hello got my minecraft server that runs in 1.8-1.16. But i want it to say 1.8 but instead it says 1.15.2 how would i fix that

The server list will show the highest possible version you can play with as most servers are backward compatible (not forward). So it makes sense to show the highest version number possible.

Then you can in the description mention the other versions you support if you wish.
